4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
The QUAT sanitizer concentration (500+ ppm) at 3-comp sink is too high. QUAT sanitizer concentration shall be approx 200ppm. The chlorine sanitizer concentration (~10-20ppm) at the dishwasher is too low. Chlorine sanitizer concentration shall be 50-100ppm. Have both the dishwasher and QUAT dispenser at the 3-comp sink repaired and/or replaced to be functioning properly and dispensing at the required concentration level outlined in the Georgia Food Code. QUAT sanitizer at 3-comp sink shall be diluted and concentration checked with QUAT test strips. If using dishwasher before concentration is corrected, all dishes must be put in the QUAT saniziter in the 3-comp sink.
