Manager lacking proof of Food Manager Certification. No certification present nor any employee that is certified present. PIC has 30 days to submit a certificate for a Certified Food Safety Manager
4-2A - food stored covered
Observed uncovered food in cold holding units.observed utensils not in use inside food continer. Consulted with PIC on covering any equipment with lids or other methods of protection from contamination.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Equipment food-contact surfaces and utensils not sanitized, not adhering to establishment's clean up schedule. Build up of food debris on facility's food contact surfaces. PIC made a quaternary sanitizing solution and able to clean onsite while inspections was conducted.
