Person in charge not performing duties; not ensuring employees are properly sanitizing food contact surfaces or equipment through routine monitoring of solution temperature and exposure time for hot water sanitizing, chemical concentration, pH, temperature, and exposure time for chemical sanitizing.
4-2B - food-contact surfaces: cleaned & sanitized
Equipment food-contact surfaces and utensils not sanitized; observed an employee utilizing the facility's dishwasher rinse sink without initiating any sanitizing procedures; all ware-washing/sanitizing methods shall adhere to the requirements outlined in the Georgia Food Code; PIC and staff were instructed to utilize facility dishwasher for all dishes until corrective measures for the 3-comp. sink were ensured.
6-2 - proper date marking and disposition
Observed various food items held for more than 24 hours with no date marking in facility's reach in coolers and prep top coolers. Observed facility's house made soy sauce bearing no date marking.
12A - contamination prevented during food preparation, storage, display

Food was not protected from sources of environmental of contamination, 1.observed food container in prep top cooler with insect, consulted with PIC , item in question was discarded. 2. Observed in storage room with unlabeled, unprotected bulk containers.

Regulation: 511-6-1.07(5)(k) - controlling pests (pf, c)
Observed live roaches in facility's ware-washing area; PIC advised to consult with licensed pest control operator.

Regulation: 511-6-1.02(1)(d) - displaying of the inspection report (c)
The most current inspection report is not prominently displayed in public view, within 15 feet of the front or primary public door and between five feet and seven feet from the floor or in an area where it can be read at a distance of one foot away.
