Observed the 3-compartment sanitizer solution to have a temperature of 98F. A quaternary ammonium compound solution shall have a minimum temperature of 75ºF (24ºC), P have a concentration as specified in DPH Rule 511-6-1-.07(6)(g) and as indicated by the manufacturer’s use directions included in the labeling, P and be used only in water with 500 ppm hardness or less or in water having a hardness no greater than specified by the EPA-registered label use instructions. COS: PIC emptied 3-copartment sanitizer solution and prepared more. Solution was 73F and 200-400ppm when tested with testing kit.

Observed clean plates and bowls to be stored upright, with no protection from possible overhead contamination. Clean equipment and utensils shall be stored as specified under paragraph 1 of this subsection and shall be stored:
(i) In a self-draining position that allows air drying; and
(ii) Covered or inverted. COS: PIC voluntarily placed clean dishes in an inverted position to ensure that no contamination can occur.

Observed there to be an accumulation of food and black debris in the gaskets of the 2-door reach in cooler. Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues. PIC to clean gaskets before placing food in reach in cooler.

Observed there to be ceiling tiles missing throughout the food service establishment. All physical facilities shall be maintained in good repair. PIC to get ceiling tiles replaced.
