Observed multiple foods cooling in reach-in cooler to be cooling while fully covered.
When placed in cooling or cold holding equipment, food containers in which food is being cooled shall be:
(i) Arranged in the equipment to provide maximum heat transfer through the container walls; and
(ii) Loosely covered, or uncovered if protected from overhead contamination during the cooling period to facilitate heat transfer from the surface of the food.
Note: PIC immediately uncovered all cooling foods.

No CFSM was in facility. Facility only had ServSafe Food Handler Certifications posted.
Food service establishments shall have in its employ a Certified Food Safety Manager (CFSM) as specified in paragraph (b) of this subsection to ensure food safety is being managed within the food service establishment during all hours of operation
Note: PIC will become ServSafe certified and have the certification posted in 30 days.

Observed QAC sanitizer to register at 0 ppm.
A QAC sanitizer solution should have a concentration of 150-400 ppm.

Note: PIC immediately replaced container with a scoop with a handle.

Observed multiple personal cups and bottles in kitchen area.
Areas designated for employees to eat, drink, and use tobacco shall be located so that food, equipment, linens, and single-service and single-use articles are protected from contamination.
