Observed the high temperature mechanical warewashing machine to reach a PSI of 7, when manufacturer data plate states it should be 20 PSI with +/- 5 PSI. 511-6-1.05(6)(m) - Mechanical Warewashing, Sanitization Pressure(C) (m) Mechanical Warewashing Equipment, Sanitization Pressure. The flow pressure of the fresh hot water sanitizing rinse in a warewashing machine, as measured in the water line immediately downstream or upstream from the fresh hot water sanitizing control valve, shall be within the range specified on the machine manufacturer’s data plate and may not be less than 35 kilopascals (5 pounds per square inch) or more than 200 kilopascals (30 pounds per square inch). COS: The facility will discontinue use of the warewashing machine, until this is corrected.

Observed the backdoor to not be protected from the entry of insects and rodents. 511-6-1.07(2)(m) - Outer Openings Protected (C) (m) Outer Openings, Protected.
- Except as specified in paragraphs 2 through 5 of this subsection, outer openings of a food service establishment shall be protected against the entry of insects and rodents by:
(i) Filling or closing holes and other gaps along floors, walls, and ceilings;
(ii) Closed, tight-fitting windows; and
(iii) Solid, self-closing, tight-fitting doors. Note: The facility will need to have the back door repaired to ensure that outer openings are protected from the entry of insects and rodents.
