Observed there to be no sanitizer made available. Food contact surfaces have to be sanitized every 4 hours. COS: PIC made a bleach sanitizer, and the concentration was 50-100ppm when tested.

Observed raw wood installed on walls in men's restroom. Except as specified under subsection (2)(d) of this Rule and except for antislip floor coverings or applications that may be used for safety reasons, floors, floor coverings, walls, wall coverings, and ceilings shall be designed, constructed, and installed so they are smooth and easily cleanable. Corrective Actions: PIC stated wood will be painted and sealed to create a smooth, easily cleanable surface.

Quaternary ammonium sanitizer not at proper minimum strength for manual warewashing. QAC sanitizer solution shall have concentration between 200-400 ppm. Note: PIC made new QAC sanitizer solution at proper concentration.

Observed mop stored in empty mop bucket while drying. After use, mops shall be placed in a position that allows them to air-dry without soiling walls, equipment, or supplies. Note: PIC arranged mops so that proper air-drying can occur.
