4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(c) - cooking & baking equipment (c)
Observed interior of microwave soiled. The food-contact surfaces of cooking and baking equipment shall be cleaned at least every 24 hours. This subsection does not apply to hot oil cooking and filtering equipment if it is cleaned as specified under subsection (7)(b)3(v) of this Rule. 2. The cavities and door seals of microwave ovens shall be cleaned at least every 24 hours by using the manufacturer's recommended cleaning procedure. Corrective Actions: PIC immediately cleaned and sanitized the interior surfaces of the microwave.
12B - personal cleanliness
Regulation: 511-6-1.03(5)(g) - jewelry (c)
Observed employee actively prepping food while wearing bracelets. Except for a plain ring such as a wedding band food employees may not wear jewelry including medical information jewelry on their arms and hands while preparing food. Corrective Actions: PIC instructed employee to remove the bracelets and wash their hands before returning to work.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(2)(a) - floor, walls, & ceilings, cleanability (c)
Observed porous ceiling tiles throughout the main kitchen area as well as unfinished wood by the fryer. Floors, floor coverings, walls, wall coverings, and ceilings shall be designed, constructed, and installed so they are smooth and easily cleanable. Corrective Actions: PIC to contact owner to have ceiling tiles replaced and unfinished wood sealed.
