Observed an employee to rinse their gloves off, using the pre-rinse sprayer, instead of discarding the gloves and effectively washing their hands. Food employees shall clean their hands in a handwashing sink or approved automatic handwashing facility and may not clean their hands in a sink used for food preparation or warewashing, or in a service sink or curbed cleaning facility used for the disposal of mop water and similar liquid waste. COS: PIC instructed employee to removed gloves and wash their hands at the handwashing sink, during the inspection.

Upon entering the walk-in cooler, EHS observed sliced cantaloupe and corn bread mix to be cooling while tightly covered. EHS also observed tomatoes and raw tenderloin, located in the prep-top cooler and 2-door reach-in, to be cooling while tightly covered. Cooling methods being used/observed were not adequate in rapidly cooling Time/Temperature Control for Safety Foods. COS: Tomatoes and tenderloin were uncovered and moved to the walk-in cooler to ensure proper cooling occurred. The food that was already cooling in the walk-in cooler was uncovered to ensure proper cooling occurred.
