4-2A - food stored covered
Regulation: 511-6-1.04(4)(c)1(iv) - packaged & unpackaged food, food stored covered(c)
Observed several items not covered or sealed to protect from overhead contamination. Observed taco shells and taco salad bowls stored on the steam table not covered. Observed frozen hamburgers and other items in reach-in freezer not covered or properly sealed. Observed hot TCS food items on the steam table not covered in the main kitchen area. Except as specified under paragraph 2. of this subsection and when cooling as specified in DPH Rule 511-6-1-.04(6)(e)2.(ii), storing the food in packages, covered containers, or wrappings, except for loosely covered or uncovered containers in which food is being cooled if protected from overhead contamination. The PIC had food employees cover items.
14B - utensils, equipment and linens: properly stored, dried, handled
Regulation: 511-6-1.05(10)(a) - equipment & utensils, air-drying required (c)
Observed food containers on a wired rack across from the 3-compartment sink wet-stacking. After cleaning and sanitizing, equipment and utensils:

Shall be air-dried or used after adequate draining before contact with food; and

May not be cloth dried except that utensils that have been air-dried may be polished with cloths that are maintained clean and dry.
The PIC had food employees rearrange containers so that they could properly air-dry.

Observed clean food bowls and plates not stored covered or inverted on the top of the prep table in the main kitchen area. Clean equipment and utensils shall be stored as specified under paragraph 1 of this subsection and shall be stored:
(i) In a self-draining position that allows air drying; and
(ii) Covered or inverted. PIC had food employees invert bowls.
14C - single-use/single-service articles: properly stored, used
Regulation: 511-6-1.05(10)(e)1&3 - single-service/single-use items stored 6" off floor in clean, dry location (c)
Observed to-go containers and bowls not stored to protect contamination. Observed to-go containers and bowls stored on top prep-top cooler in the main kitchen area removed from its original packaging and not inverted or covered. Single-service and single-use articles shall be stored as specified under paragraph 1 of this subsection and shall be kept in the original protective package or stored by using other means that afford protection from contamination until used. PIC had the food employee flip containers to prevent any contamination.
