Observed several metal and plastic food containers wet-stacked on the racks in the warewashing area. After cleaning and sanitizing, equipment and utensils:
Shall be air-dried or used after adequate draining before contact with food; and
May not be cloth dried except that utensils that have been air-dried may be polished with cloths that are maintained clean and dry. Food employee rearranged food containers to properly air-dry.

Observed dry spice rub uncovered in a bowl uncovered and open to elements. Observed food items and beverage boxes stored on floors of holding units. Items must be vertically separated from sources of contamination by shelving units or materials of at least 15cm (6in). CA: Informed PIC and discussed ways to manage space while maintaining separation of boxes and items.

Observed food residue and buildup along shelving of meat cooler. Observed black residue along chute and sides of ice machine. Food contact surfaces should be clean to sight and touch to manufacturer's specifications or at a frequency that precludes the accumulation of dirt, debris, or growth. Instructed PIC/Employees to defrost and sanitize ice machine. Instructed PIC to thoroughly clean shelving of cooling units.

Observed buildup of soil and debris on walls throughout the main kitchen. Non-food contact surfaces of equipment and premises shall be kept free of accumulation of dust, dirt, food residue and other debris. CA: PIC shall instruct employees to adequately clean non-contact surfaces.
