4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed sink and surface sanitizer concentration at 0ppm in the 3 compartment sink. PIC removed the sanitizer dispense cover to further inspect the problem. All lines were observed to be properly connected; however, the sanitizer was unable to be dispensed. PIC was advised to manually pour the sanitizer solution and use the sink and surface test strips to ensure that the sanitizer concentration is within the required range as instructed on the test strip bottle.

Observed food service permit not posted for customers to view. PIC corrected on site and brought out the permit for customers to view.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Observed food debris and build up in the gelato and ice cream coolers in the front food service area. PIC was advised to clean the food debris in the reach in cooler to prevent further accumulation.
