Observed quat sanitizer did not meet the minimum strength requirements of 150-400 PPM in the three compartment sink. The sanitizer solution was observed at 100 ppm. PIC was coached on the proper protocol to set up and test quat sanitizer in the three compartment sink. After remaking, the quat sanitizer was observed at 400 ppm.

Observed excessive dust accumulation on floors located beneath the dish machine. Also observed excessive build up on the restroom vent. PIC advised that she would have the floors and vents cleaned by 3/15/25.

The physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products.
Except for cleaning that is necessary due to a spill or other accident, cleaning shall be done during periods when the least amount of food is exposed, such as after closing.
