Observed clean plates and bowls "in use" stored on the hot line with build up on the plates.
Observed both ice scoop containers in need of cleaning due to brown build up on the interior surface.

Regulation: 511-6-1.07(6)(c) - storage, separation (p)
Observed (1) chemical bottle hanging on the hand washing sink on the hot line and (1) other chemical bottle hanging on the metal shelf near food items like syrup. Once chemicals are used they must be returned to the chemical storage area to prevent contamination. PIC relocated the chemicals (COS).

Observed (4) containers of half and half stored in the walk in cooler with a best by date of 1/21/26. PIC discarded the milk products (COS).

Observed the shelves in the reach in cooler with a thick build up of rust accumulation. Advised PIC to replace the shelves or clean and seal with a food grade sealant or paint.
511-6-1.05(1)(i) - Nonfood-contact Surfaces (C) (i) Nonfood-contact Surfaces. Nonfood-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require frequent cleaning shall be constructed of a corrosion-resistant, nonabsorbent, and smooth material.

Observed debris underneath both cabinets below the drink machines, under the cabinet where sugar containers are kept, reach in cooler where hashbrown containers are stored, and below the grill on the hot line (oil accumulation). All areas must be cleaned to avoid build up.

The food-contact surfaces of cooking equipment and pans shall be kept free of encrusted grease deposits and other soil accumulations.
- Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.

Observed a shirt laying on top of clean metal pans near the prep sink. Advised PIC to make sure all employee's items are stored in a designated area (COS).
