6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed food not maintained frozen in a freezer. Chicken fritters, fries, and breaded popcorn chicken was observed thawed in the walk in freezer. The freezer was left open while the gaskets were being changed. PIC instructed to relocate all thawed chicken fritters, breaded popcorn chicken, and fries to the walk in cooler. Thawed TCS foods cannot be refrozen. PIC and owner agreed to relocate thawed products.
12A - contamination prevented during food preparation, storage, display
Regulation: 511-6-1.04(4)(r) - food storage, prohibited areas (c)
Observed sealed boxes of chicken fritters with pools of stagnant water store on top of the boxes as a result of a condensation leak coming from the condenser in the walk in freezer. The freezer was cut off to repair the gasket according to the owner. After opening the box to confirm the packages were sealed, PIC advised to removed sealed packages from the boxes and relocate to the walk in cooler due to the product being thawed.

17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(4)(b) - designated areas for employee activity, located to prevent contamination of food, equipment, utensils, linens, & single service articles (c)
Observed a bottle of water and medicine stored in the food preparation area. Employees should store their personal items in a designated area and not in an area that could cause contamination to food items being served. The bottle and medicine were both removed (COS). Employee cell phone was also stored in the food preparation area.
Observed build up on vent in the men's restroom. Also observed a pillow and blanket stored in a reach in freezer not being used in the storage room identified as private (Do not enter). Ice cream and cakes are being stored in the restricted room in freezers.

Areas designated for employees to eat, drink, use tobacco products and electronic devices shall be located so that food, equipment, linens, and single-service and single-use articles are protected from contamination.

Lockers or other suitable facilities shall be located in a designated room or area where contamination of food, equipment, utensils, linens and single-service and single-use articles cannot occur.
