Observed no thermometer in reach-in cooler or walk-in cooler.
12A - contamination prevented during food preparation, storage, display

Observed sanitizer bucket stored next to tacos.

- Except as specified in paragraphs 2 and 3 of this subsection, food shall be protected from contamination by storing the food:
(i) In a clean, dry location;
(ii) Where it is not exposed to splash, dust, or other contamination; and
(iii) At least 6 inches (15 cm) above the floor.

Food in packages and working containers may be stored less than 6 inches (15 cm) above the floor on case lot handling equipment if the equipment can be moved by hand or by conveniently available apparatuses such as hand trucks and forklifts.

Pressurized beverage containers, cased food in waterproof containers such as bottles or cans, and milk containers in plastic crates may be stored on a floor that is clean and not exposed to floor moisture.

Shelf used to store fryer baskets observed with paint peeling on the preparation line. PIC will replace the rack by 6/15/2026.
Also observed the cabinet doors below the drink station in bad repair. Doors falling off the hinges. Interior of doors in bad repair as well. PIC will have the cabinet doors repaired by 6/15/2026.
Observed a hole in the mop sink. Also observed a bin in the walk in cooler in bad repair.
511-6-1.05(2)(c) - Multiuse Food-Contact Surfaces (Pf) (c) Multiuse Food-Contact Surfaces.
- Multiuse food-contact surfaces shall be:
(i) Smooth; Pf
(ii) Free of breaks, open seams, cracks, chips, inclusions, pits, and similar imperfections; Pf
(iii) Free of sharp internal angles, corners, and crevices; Pf
(iv) Finished to have smooth welds and joints; Pf and
(v) Except as specified in paragraph 2 of this subsection, accessible for cleaning and inspection by one of the following methods:
(I) Without being disassembled, Pf
(II) By disassembling without the use of tools, Pf or
(III) By easy disassembling with the use of handheld tools commonly available to maintenance and cleaning personnel such as screwdrivers, pliers, open-end wrenches, and Allen wrenches. Pf
- The requirement in paragraph 1(v) of this subsection does not apply to cooking oil storage tanks, Distribution lines for cooking oils, or beverage syrup lines or tubes.

Observed an employee bag stored with clean dishes. PIC corrected on site by relocating the employee bag.
