Regulation: 511-6-1.04(8)(b) - expired foods (p)
Observed two containers of juice in the juice machine with expired dates (orange guava passion fruit juice best by 6/16/25 & apple juice best by 7/3/25). PIC showed invoice that stated that the juice was ordered in July of this year. Make sure to inspect all food items to make sure that the dates are not expired before receiving the purchase. The juice was discarded (COS).

Prepackaged sandwiches, eggs, infant formula, shucked oysters, milk, and time/temperature control safety foods that are labeled as “keep refrigerated” and that are for sale or service to the consumer or used as an ingredient in other foods shall be immediately discarded and shall not be sold, served, or used after the manufacturer’s expiration date or the sell-by date. P
14C - single-use/single-service articles: properly stored, used
Regulation: 511-6-1.05(10)(e)1&3 - single-service/single-use items stored 6" off floor in clean, dry location (c)
Observed a box of single use/single service cups stored on the floor in the kitchen. PIC removed the cups and placed on the counter (COS). All food and food contact surfaces should be stored 6 inches or higher off the floor.

- Except as specified in paragraph 4 of this subsection, cleaned equipment and utensils, laundered linens, and single-service and single-use articles shall be stored:
(i) In a clean, dry location;
(ii) Where they are not exposed to splash, dust, or other contamination; and
(iii) At least 6 inches (15 centimeters) above the floor. 3. Single-service and single-use articles shall be stored as specified under paragraph 1 of this subsection and shall be kept in the original protective package or stored by using other means that afford protection from contamination until used.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(3)(h),(i),(j) - temperature measuring device, manual warewashing; sanitizing solutions, testing device (pf)
Observed no quat test strips to test the sanitizer at the 3-compartment sink. (Repeat) Advised PIC to order test strips to ensure the solution is at the proper PPM concentration.
