6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed black peans, pinto beans, and cooked shrimp cold held above 41F in the walk in cooler that was prepared the night before. Items were discarded. Observed walk in cooler temperatures rising 45F to 50F during inspection. Manager was advised to slightly prop the connected walk-in freezer door to keep the walk in cooler temperatures 41F or below as a temporary solution. PIC was advised to have the walk in cooler repaired no later than June 8, 2026. A follow up will be conducted on June 8, 2026 as well.
16B - plumbing installed; proper backflow devices
Regulation: 511-6-1.06(2)(r) - system maintained in good repair (p, c)
Observed excessive ice build up on the floors and boxes in the walk in freezer. PIC was advised to chisel the ice build up and to have the walk in freezer fan repaired due to a frozen leak causing the build up. Observed a major water leak potentially coming from the air conditioning unit towards the back of the restaurant near the back door and office area, causing acoustic ceiling tiles to absorb all the water and fall onto the floor. PIC stated that a call has been placed to have maintenance come and repair the leak and has closed the facility until all repairs have been completed. All leaks were observed outside of the kitchen.
