6-1B - proper hot holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; hot holding (p)
Observed multiple containers of grits (4) hot holding at warmer #2 below 135F, less than 4 hrs. Advised PIC TCS food items shall be hot-held at 135F or above. COS: PIC relocated grits to warmer #1 for reheat.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Observed reach-in-freezer in prep area with excessive debris in need of cleaning. Advised PIC non-food contact surfaces shall be free from accumulation.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(5)(j) - using dressing rooms & lockers, used for changing clothes and storing employee belongings (c)
Upon arrival, observed purse and cellphone on prep table. Advised PIC personal belongings shall be stored in designated area. COS: PIC relocated personal belongings to designated area.
