4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed chlorine sanitizer concentration of the dish machine at 0ppm. Kitchen manager was advised to use the 3 compartment sink. Manager advised that a new dish machine has been ordered. Manager was also advised to order a larger sink stopper for the wash compartment to keep the soap water from draining.
Please email invoice for the new dish machine along with the dish machine specification documents to keundra.golden@dph.ga.gov.

Observed food debris inside of a drawer next to the prep sinks and food debris on shelves above the prep sinks. Please have shelves and drawers deeply cleaned.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed floors in the dry storage area in need of sweeping and mopping and floors underneath the fryers in need of cleaning due to grease build up.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(3)(f) - lighting intensity, adequate in food prep, storage & service areas (c)
Observed a light bulb out above the grill and stove.
