Observed plates with old food buildup and debris below the island area. PIC will ensure that all plates are clean and stored inverted.

- Equipment food-contact surfaces and utensils shall be clean to sight and touch. Pf.
6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed milk not date marked after opening. All milk must be date marked with a 7 day of less discard date after opening.
14B - utensils, equipment and linens: properly stored, dried, handled
Observed hotel pans and sheet pans stored on top of each other while wet (Wetnesting). PIC will ensure that all dishes are properly washes, rinsed, and air dried.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(d) - nonfood-contact surfaces (c)
Observed exterior of yogurt machine contained build up and an out of order sign. PIC will remove the yogurt machine until repaired. Also observed construction debris (dust) in the cabinet below the island
