Observed the ice scoop being stored inside the ice bin with the handle touching the ice. Ice scoops shall be stored in the food with their handles above the top of the food and the container. Keep ice scoops handles above the ice inside the bin.

Observed several stainless steel food-grade containers wet stacked near the dish pit area where they are stored after washing. After cleaning and sanitizing, equipment and utensils shall be air-dried or used after adequate draining before contact with food. Coach employees to pyramid stack the containers to allow them to air dry.

Observed several plastic food-grade containers wet stacked near the area where they are stored after washing. After cleaning and sanitizing, equipment and utensils: 1. Shall be air-dried or used after adequate draining before contact with food; and 2. May not be cloth dried except that utensils that have been air-dried may be polished with cloths that are maintained clean and dry. Recommend pyramid stacking the containers to allow them to air dry.
