Observed reduced oxygen packaging fish products completly thawed or thawing inside the reach in cooler and walk in cooler. Reduced oxygen packaged fish that bears a label indicating that it is to be kept frozen until time of use shall be removed from the reduced oxygen environment: Prior to its thawing under refrigeration that maintains the food temperature at 41°F or less. Employee opened each fish packaging.

Observed the certified food safety manager (CFSM) certificate posted on the wall registered to another person. Person removed the certificate from the wall. At least one employee that has supervisory and management responsibility and the authority to direct and control food preparation and service shall be a certified food safety manager who has shown proficiency of required information through passing a test that is part of an accredited program that conforms to the national standards for organizations that certify individuals. Certified Food Safety Managers must be designated to one food service establishment only and maintain and renew certification in accordance with the requirements of the examination taken. Have an employee certified in an approved CFSM course immdediately.

Documentation ensuring food employees and conditional employees are informed in a verifiable manner of their responsibility to report in accordance with the Chapter, to the person in charge, information about their health and activities as they relate to diseases that are transmissible through food. Observed no hot water (80F) at the front hand washing sink near the drive thru. A handwashing sink shall be equipped to provide tempered water at a temperature of at least 100ºF through a mixing valve or combination faucet. Have the hot water serviced.
