Observed raw shell eggs (50 F) above 41 F inside of the prep cooler. Possibly the employees left the eggs on the counter at room temperature before placing them inside the prep cooler. All cold hold Time/Temperature Control for Safety (TCS) foods must be 41 F or below. Corrected on Site (COS): Eggs discarded.

Observed shredded cheese held past the discard time while being on Time as a Public Health Control (TPHC). The shredded cheese was not discarded at the 11 am discard time. The time was labeled on the container. When utilizing TPHC, the food item must be discarded at the discarded time. Corrected on Site (COS): Shredded cheese discarded.

Observed 0 ppm of Quat sanitizer solution at the three-compartment sink and inside the sanitizer buckets. According to the instructions posted on the wall, the Quat sanitizer solution must be between 150-400 Parts Per Million (ppm). The sanitizer solution must be at the correct ppm. Recommend using chlorine sanitizer solution for sanitizer until the issue is resolved to allow the solution to be at the correct ppm.

Observed clean food-grade plastic containers stacked where the date marking sticker is touching the inside of the food contact surface. Equipment food-contact surfaces and utensils shall be clean to sight and touch. Remove the date stickers correctly/properly before re-washing, re-rinsing, and re-sanitizing food-grade containers.
