Observed the dish machine with 0ppm of chlorine after the sanitize cycle. When looking at the tubes, the sanitizer tube had popped off dumping the sanitizer on the prep table beside the machine. A chemical sanitizer used in a sanitizing solution for a manual or mechanical operations shall meet the requirements on the data table of the machine. Call EcoLab to come and fix the machine.

Observed strawberry soft serve inside the ice cream dispenser with a temperature of 50°F. Person in charge stated the food has been inside the unit three hours prior to my arrival. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F or below. Food discarded.

Observed several food handlers with beards more than one-half inch in length prepping foods without proper beard restraints. Employees preparing or handling food shall use effective and clean, disposable or easily cleanable nets or other hair restraints approved by the Health Authority, worn properly to restrain loose hair including beards and mustaches longer than one half inch. Obtain proper hair restraints.
