Observed stainless steel food-grade containers wet stacked while being stored in the storage area. After cleaning and sanitizing, equipment and utensils shall be air-dried or used after adequate draining before contact with food. Recommend pyramid stacking to allow air drying before storing the containers properly.

Observed the gasket not adjusted properly to the reach-in cooler door. Equipment components such as doors, seals, hinges, fasteners, and kick plates shall be kept intact, tight, and adjusted in accordance with the manufacturer's specifications. Have the gasket adjusted/repaired properly to the reach-in cooler door.

Observed two containers of sweet cream (49F-57F) inside the front reach in cooler. Ambient air temperature of the unit is 53F. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F or below. Food items were discarded.

Observed the person in charge (PIC) bare handing bacon and putting it on customer cheese fries. Food employees shall not contact exposed, ready-to-eat food with their bare hands and shall use suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment. Cheese fries were discarded and PIC washed hands and put on gloves.

Observed the PIC handling food without a hair restraint. Employees preparing or handling food shall use effective and clean, disposable or easily cleanable nets or other hair restraints approved by the Health Authority, worn properly to restrain loose hair including beards and mustaches longer than one half inch. PIC put on a hat.

Observed the PIC handling food while wearing a bracelet and a watch. Except for a plain ring such as a wedding band food employees may not wear jewelry including medical information jewelry on their arms and hands while preparing food. Have all food employees remove jewelry from wrists while handling and prepping food.
