Observed no lid covering the outside dumpster. Receptacles and waste handling units for refuse, recyclables, and returnables shall be kept covered with tight-fitting lids or doors if kept outside the food service establishment. Contact the dumpster company to repair the current dumpster or bring a new dumpster to the establishment.

Observed corn beef (50F), Turkey breast (46F), Gryro meat (50F) and sliced American cheese (47F) on the prep line being held above 41F. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below or 135°F (57°C) or above. Person in charge (PIC) states the items in the unit were placed on the line prior to my arrival. Corrected on site (COS): PIC moved all items on the prep line into the walk in cooler.
