Observed several clean food containers stacked while wet. After cleaning and sanitizing, equipment and utensils Shall be air-dried or used after adequate draining before contact with food. Coach employees to allow food containers to air-dry before being stacked for storage.

Observed the side door of the outside dumpster open with trash being stored inside. Receptacles and waste handling units for refuse, recyclables, and returnables shall be kept covered with tight fitting lids. Close the dumpster doors.

Observed several flies inside the establishment today. The presence of insects, rodents, and other pests shall be controlled to minimize their presence on the premises by routinely inspecting incoming shipments of food and supplies; routinely inspecting the premises for evidence of pests; using methods, if pests are found, such as trapping devices or other means of pest control as specified under the rules and regulations; and eliminating harborage conditions. Observed slimy pink organic buildup along the baffle inside the ice machine. Equipment food-contact surfaces and utensils shall be cleaned: In equipment such as ice bins and beverage dispensing nozzles and enclosed components of equipment such as ice makers at a frequency specified by the manufacturer; or absent manufacturer specifications, at a frequency necessary to preclude accumulation of soil or mold. Discard existing ice in order to wash, rinse and sanitize interior of the ice machine.
