Observed Reach-in Cooler next to Reach-in Freezer unable to maintain time-temperature control for safety (TCS) foods at a temperature of 41F or below. Corrective Action: Person-in Charge instructed all cold-holding units must be able to maintain TCS foods at a temperature of 41F or below. All impacted foods discarded.

Reach-in Cooler not in good repair, unable to maintain temperature. PIC notes temperature log recorded 35F at 1:27pm using unit's external thermometer. External thermometer reads 40F at time of inspection with air temperature at 50F, inaccurate. Do not use unit until it can maintain temperatures at 41F or below. Contact technician.

Observed rice in walk-in cooler (WIC) cooling in dense, covered containers. One batch of rice started at 12Pm, another at 10:30AM. 10:30AM batch spread then and placed in walk-in freezer to meet end of stage 2 cooling at 2:30PM. 12PM batch met stage 1 cooling, uncovered in WIC to continue cooling. Both batches properly cooled. Person in Charge advised to properly cool food using ice baths and shallow, uncovered containers. COS.
