Routine
6-1A - proper cold holding temperatures
Observed sliced cheeses, sliced tomatoes held at temperature greater than 41 degrees fahrenheit at prep station. PIC voluntarily discarded affected product. Discussed using time as a public health control for prep bar items.
11D - thermometers provided and accurate
Regulation: 511-6-1.05(2)(x) - tmd, located in refrigerators/ hot holding (pf, c)
No thermometers observed in walk-in cooler, walk-in freezer, and several reach in coolers. Advised PIC to order enough thermometers for each unit to be supplied with a thermometer. Thermometers must be placed at the warmest area of the unit near the door.
