Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed chlorine sanitizer in dish machine below 50ppm. Corrective Action (CA): Person in Charge (PIC) instructed to ensure chlorine sanitizers are maintained between 50-100ppm in dish machine. PIC instructed employee to set up three compartment sink to properly wash, rinse, and sanitize dishes. COS.

Regulation: 511-6-1.05(6)(a) - good repair & proper adjustment (c)
Observed dish machine currently incapable of maintaining proper chlorine sanitizer concentration to properly sanitize dishes. PIC instructed to call technician to adjust chemical concentration prior to use for dish sanitation.
