NO proper EPA-registered Noro disinfectant on site. Corrective Action (CA): Person-in charge (PIC) instructed that the establishment must have written instructions and an EPA-registered disinfectant.
11A - proper cooling methods used: adequate equipment for temperature control
Regulation: 511-6-1.04(6)(e) - cooling methods (pf, c)
Observed chicken cooling on counter in dense containers. PIC placed chicken in ice bath, properly cooled below 70F in 2 hours.
11C - approved thawing methods used
Regulation: 511-6-1.04(6)(c) - thawing (c)
Observed fish thawing in make table in vacuum sealed packaging. PIC removed fish from packaging.
14B - utensils, equipment and linens: properly stored, dried, handled
Regulation: 511-6-1.05(10)(e)1,2,4 - equipment, utensil, linens, stored 6" off floor in clean, dry location (c)
Observed customer plates not stored inverted.
