6-1B - proper hot holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; hot holding (p)
Observed marinara in front and back warming units held below 135F. Corrective Action (CA): Person in Charge (PIC) instructed to ensure all foods held hot are held at 125F or above. PIC stated marinara pans were moved to warmers around 1:30PM. PIC reheated sauces om over to over 165F. COS.

Regulation: 511-6-1.05(6)(a) - good repair & proper adjustment (c)
Observed front warmer holding marinara sauce turned off while holding food at improper temperature. Observed back warmer currently incapable of holding time/temperature control for safety foods at proper temperatures. PIC advised to increase temperature on unit or call technician to adjust unit, Front warmer turned on.
