Observed multiple items in walk-in cooler cooling in dense, covered containers. Person-in Charge (PIC) instructed to cool all time/temperature control for safety (TCS) items using shallow, uncovered containers or other approved methods. PIC uncovered items and items cooling properly. REPEAT. COS.
