Observed multiple time/temperature control for safety (TCS) items in the meat walk in cooler (WIC) stored uncovered. Corrective Action (CA): Person-in charge (PIC) instructed that all foods not actively cooling must be stored covered. PIC covered foods.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed dish machine with a chlorine concertation below 50 ppm. CA: PIC instructed to ensure chlorine sanitizer in dish machine is between 50-100 ppm. PIC changed chlorine bucket. COS.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed build up of debris on the flooring around fryer area of kitchen, not clean.
