Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Cream cheeser, uncrustables, cheese, juice found with no expiration date. Cream cheese was packaged july 2025. Uncrustables were labeled keep frozen (found in walk-in cooler). No dates whatsoever on cheese and juice. CA: Develop date marking procedure for "in-house".
10D - food properly labeled; original container
Regulation: 511-6-1.04(4)(d) - food storage containers identified with common name of food (c)
Corn meal and dry-milk stored in containers labeled "Rice" and "Flour". CA: Label correct common name of food on storage containers.
14C - single-use/single-service articles: properly stored, used
Regulation: 511-6-1.05(10)(e)1&3 - single-service/single-use items stored 6" off floor in clean, dry location (c)
Single use trays in torn box was found stored on the floor in side room storage area. CA: Store at least 6 inches off the ground.
