6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed eggs, raw chicken, and creamer in walk in cooler at 48 degrees F. Manager also registered the same temps on her thermometer. C/A - repair cooler and store all TCS food in other coolers and freezer until unit can keep temp below 41 degrees F. COS - Manager Tossed all TCS food in WiC longer than 4 hours and moved all ovether TCS food to freezer.

Observed ranch and buttermilk ranch at 71 degrees F sitting on counter. C/A - keep refrigerated below 41 degrees F or toss out after four hours. COS - manager tossed dressing.
