Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed butter in reach in cooler at 48 degrees F for cold holding. C/A - have unit serviced so it can hold TCS food safely below 41 degrees F. COS - manager moved all TCS food to working reach in cooler since it had been less than 2 hours.
