observed raw chicken sitting above raw steak, raw steak sitting above sauce, raw steak sitting above sour cream. all items in covered container but not following temperature control specifications. cos-items moved to correct order.
4-2B - food-contact surfaces: cleaned & sanitized

observed items (sponges/steel wool) sitting in vegetable prep sink. cos-removed.
12C - wiping cloths: properly used and stored
Regulation: 511-6-1.05(10)(b) - wiping cloths, air drying location (c)
observed wiping cloths on tables rather than in sanitizer buckets. cos-removed and placed in sanitizing buckets.
14B - utensils, equipment and linens: properly stored, dried, handled
Regulation: 511-6-1.05(9)(d) - mechanical washing & drying (c)
observed pots on rack drying with water in the bottom cos-pots were inverted to dry properly.
