Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed seasoned, diced chicken stored beyond its discard. Chicken was prepared 5/29 and should have been discarded by 6/4. Chicken was discarded. Spoke with the owner about practicing first in, first out rule.
