Salads on the counter during lunch were temped at 46 deg f. All tcs food cold holding shall be maintained at 41 deg f or below. COS: Salad moved to walk in cooler to cool down, just brought out for lunch from walk in cooler.

Three compartment sink had sanitizer with concentration level above 400 ppm. They were in the process of washing dishes. Chemical sanitizers shall meet requirements specified in 40 CFR 180.940 - Food - Contact surface sanitizing solutions. COS: Sink emptied and solution re-made to correct concentration.
