Tomato, lettuce, and ham being held cold above 41 deg f. Food being held cold shall be maintained at 41 deg f or below. COS: Out of temp food was discarded.
12A - contamination prevented during food preparation, storage, display

Boxes stored on the floor in the walk in cooler and freezer. Food shall be protected from contamination by being stored at least 6' off the floor.
14B - utensils, equipment and linens: properly stored, dried, handled
Regulation: 511-6-1.05(10)(a) - equipment & utensils, air-drying required (c)
Wet nested dishes. Equipment shall be air dried.
