12A - contamination prevented during food preparation, storage, display
Regulation: 511-6-1.04(4)(q) - food storage (c)
Observed chicken not stored 6 inches off the floor in the WIC. CA: food shall be protected from contamination by storing the food at least 6 inches (15 cm) above the floor. PIC will place the chicken on racks.
12B - personal cleanliness
Regulation: 511-6-1.03(5)(j) - hair restraints (c)
Observed employees preparing food without an type of hair restraint. CA: Employees preparing or handling food shall use effective and clean, disposable or easily cleanable nets or other hair restraints approved by the Health Authority, worn properly to restrain loose hair including beards and mustaches longer than one half inch. PIC provided employees with hairnets.
16B - plumbing installed; proper backflow devices
Regulation: 511-6-1.06(2)(r) - system maintained in good repair (p, c)
Observed the hot water at the 3 compartment sinking continuously running. CA: A plumbing system shall be repaired according to law; P and maintained in good repair. PIC will have the sink repaired.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(1)(i) - nonfood-contact surfaces (c)
Observed cardboard boxes used on the floor and prep tables to prevent soiling. CA: Nonfood-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require frequent cleaning shall be constructed of a corrosion-resistant, nonabsorbent, and smooth material. PIC will remove the cardboard boxes.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(2)(c) - floor and wall junctures, coved, & enclosed or sealed, water-flushed floors provided with drains & graded to drain (c)
Observed the coving missing along the wall near the ice machine in the dry storage area. CA: The floors in food service establishments in which water flush cleaning methods are used shall be provided with drains and be graded to drain, and the floor and wall junctures shall be coved and sealed. PIC will have the coving replaced.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed the ceiling tiles in the dry storage area not free from water stains. CA: All physical facilities shall be maintained in good repair. PIC will have the ceiling tiles replaced.
