Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed boiled eggs and waffle batter being held at a temperature above 41F. CA: Discussed possibly using time as a public health control again with kitchen manager and hotel manager. PIC and hotel manager will determine a more efficient way to ensure food is maintained 41F or below.
