Observed there were no paper towels at the hand wash sink located in the bar area. COS: PIC immediately changed the paper towels once the inspector informed him the paper towels were empty. CA: All hand wash sinks must provide hand drying provisions.
8-2B - toxic substances properly identified, stored, used
Regulation: 511-6-1.07(6)(c) - storage, separation (p)
Observed single service lids sitting against bucket of sanitizer water. COS: PIC relocated the single service lids to the dry storage area. CA: Poisonous or toxic materials shall be stored so they cannot contaminate food, equipment, utensils, linens, and single-service and single-use articles
14B - utensils, equipment and linens: properly stored, dried, handled
Regulation: 511-6-1.05(10)(a) - equipment & utensils, air-drying required (c)
Observed multiple silver pans stored on the dry food rack that had been wet stacked. COS: Store Manager checked all the bulk of the pans on the clean dish rack and separated the ones that were still wet. CA: Equipment and utensils should be allowed to dry completely prior to stacking.
