Observed burger patties stored in cooler drawer right next to raw chicken. Observed raw smash burgers stored over cooked chicken. COS: PIC reorganized storage of all coolers. CA: Food shall be protected from cross contamination.
6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed multiple items in prep top coolers and reach in coolers temping above 41F. COS: Food that was prepped the day before was discarded. CA: Refrigerated foods shall be maintained at 41F.
6-1B - proper hot holding temperatures

Observed rice being held in the rice cooker below 135F. COS: Rice discarded. CA: Food being hot held must be maintained at 135F or higher.
