Observed PIC could not provide written notification of the presence of major food allergens for customers. The permit holder shall notify consumers by written notification of the presence of major food allergens as an ingredient in unpackaged food items that are served or sold to the consumer. PIC needs to post written notification.
11C - approved thawing methods used
Regulation: 511-6-1.04(6)(c) - thawing (c)
Observed whole roasts and tubes of ground beef thawing in still water in meat sink. Observed raw shrimp thawing on drain board of meat sink. Time/temperature control for safety food shall be thawed under refrigeration that maintains the food temperature at 41°F (5°C) or less, completely submerged under cool running water, or by another method listed under rule 511-6-1.04(6)(c).
12C - wiping cloths: properly used and stored

Observed multiple wet wiping cloths stored on prep surfaces. Cloths in-use for wiping counters and other equipment surfaces shall be held between uses in a chemical sanitizer solution at a concentration specified under DPH Rule 511-6-1-.05(6)(n). PIC needs to ensure wiping cloths are placed in sanitizer buckets when not in use.
14B - utensils, equipment and linens: properly stored, dried, handled

Observed multiple pans stacked while still wet in ware washing area. Equipment and utensils shall be allowed to completely air dry before stacking. COS: PIC separated pans to allow for air drying.
