Observed raw meat prep area with sheetrock walls. Observed walls in non prep areas of kitchen made of sheet rock with chipped paint in various places. Materials for indoor floor, wall, and ceiling surfaces under conditions of normal use shall be: smooth, durable, and easily cleanable for areas where food service establishment operations are conducted; closely woven and easily cleanable carpet for carpeted areas; and nonabsorbent for areas subject to moisture such as food preparation areas, walk-in refrigerators, warewashing areas, toilet rooms, mobile food service unit servicing areas, and areas subject to flushing or spray cleaning methods. PIC needs to cover walls in any food prep area with a non absorbent, smooth, easily cleanable surfaces such as frp board. The sheet rock in the kitchen in non food prep areas must at minimum have any holes sealed and be painted entirely with epoxy paint.
