6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed multiple food items through out the kitchen being held at temperatures greater than 41F. COS: Items that were recently prepped or pulled were placed in the WIC to continue the cooling process. Items that were prepped yesterday were discarded. CA: Food shall be maintained at 41F or below.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
Observed plates and dishes that were explained to be clean dishes that still had food residue and debris on them. COS: PIC moved all dishes that were visibly soiled back to ware wash area to be cleaned again. CA: All equipment food-contact surfaces and utensils shall be clean to sight and touch.
18 - insects, rodents, and animals not present
Regulation: 511-6-1.07(5)(k) - controlling pests (pf, c)
Observed multiple flies in the main kitchen. Spoke with manager about the harborage of flies. Manager states they are actively working with EcoLab to prevent flies from entering the facility and that they will be back tomorrow to treat the facility.
17B - garbage/refuse properly disposed; facilities maintained
Regulation: 511-6-1.06(5)(n) - covering receptacles (c)
Observed doors to dumpster were left open. COS: PIC closed doors to the dumpster. CA: Receptacles and waste handling units shall be kept covered.
