6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed multiple reach in coolers located in the front food service area and main kitchen, holding breakfast sandwiches with no date marking. CA: Discussed proper date marking procedures with PIC. Discussed new process for date marking going forward. COS: PIC placed date marking sticker on front of yellow trays holding breakfast sandwiches.
18 - insects, rodents, and animals not present

Observed front entrance of facility was not tight fitting. Observed door located at the end of the hallway next to restrooms was not tight fitting or self closing. CA: PIC stated there is already a work order in for the front door. Maintenance will be made aware of issues observed with hallway door.
